All Seasons Mushrooms

Portabella Sandwich

Ingredients:

6 ounces sliced All Seasons Portabella Mushrooms
2 Tbsp. extra virgin olive oil
1 small loaf (8 ounces) Italian or other crusty bread
3 Tbsp. prepared pesto
1 cup spinach, arugula or lettuce leaves
4 ounces mozzarella cheese, cut into thin slices
1 jar (7 ounces) roasted red peppers

Directions:

Sauté mushroom slices in olive oil for 5 minutes, until brown.
Cut bread horizontally in half. Spread bottom half with pesto.
Layer with spinach, mozzarella, peppers and mushrooms. Cover
with top of bread. Cut crosswise in half to serve.
