All Seasons Portabella Mushroom Burger

Ingredients:

1 All Seasons Portabella mushroom
1 tbsp olive oil
garlic, chopped
1 pinch rosemary
1 vine ripe tomato
2 slices oka cheese
1 multigrain kaiser bun
1 tbsp pesto mayonnaise
1 head butter lettuce
1 red onion

Directions:

Remove stem from portabella mushroom, sauté in skillet with 1 tbsp olive oil, chopped garlic, pinch of rosemary, remove from skillet and place onto a baking sheet gill side up.
Quickly sauté two slices of vine ripened tomato in same skillet, and place on top of mushroom.
Top tomato with 2 slices of oka cheese and bake at 350 degrees until cheese is bubbling, approx 5 – 7 min.
Toast Kaiser bun and spread with pesto mayonnaise.
Top bun with lettuce and a slice of red onion.
Finish with portabella burger.

Serve with a spinach salad.
