All Seasons Mushrooms

All Seasons Mushroom Omelet

Ingredients:

3 free range eggs
2 slices Prosciutto
1 cup All Seasons button mushrooms
1 tbsp butter
2 tbsp peppered boursin cheese
Seasoning
Chopped herbs (optional)

Directions:

Whip eggs, set aside.
On med high, heat small non stick skillet.
Add butter and sauté mushrooms until translucent.
Add whipped eggs, seasoning & chopped herbs.
Using a spatula, scrape down sides & allow omelet to form.
Lift omelet from sides, and allow liquid egg to flow under, continue on other side of omelet.
Place Prosciutto and boursin cheese on top.
Lightly melt under broiler 1 min.

Serve with multigrain toast and fresh fruit.
